Creamy Chicken Gnocchi Skillet

Chicken and gnocchi in one skillet, ready in under 30 minutes. The gnocchi stays pillowy while the chicken gets that seared edge you want. Sauce clings without turning gluey.

Ingredients

  • 2 boneless chicken breast cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup potato gnocchi fresh or frozen (add 2 minutes extra if frozen)
  • 0.75 cup chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic minced, added in last 30 seconds
  • 0.25 cup fresh thyme leaves stripped from stems
  • 0.5 cup Parmesan cheese grated fresh from a block
  • 0.5 cup diced onion

Equipment

  • Large skillet For searing chicken, cooking gnocchi, and simmering sauce all in one pan

Method

  1. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken cubes in a single layer and cook undisturbed for 3 minutes until golden on one side, then flip and cook 2 minutes more until no longer pink inside.
  2. Remove chicken to a plate and add 1 tablespoon butter to the same pan. Toss in diced onion and cook for 2 minutes until softened, scraping up browned bits from the bottom.
  3. Add gnocchi and ¾ cup chicken broth, then bring to a simmer. Cover and cook for 4 minutes until gnocchi puffs and softens, stirring once halfway through.
  4. Stir in 1 cup heavy cream, minced garlic, and fresh thyme leaves. Simmer uncovered for 3 minutes until the sauce thickens enough to coat the back of a spoon.
  5. Return chicken to the pan and stir in ½ cup grated Parmesan. Cook for 1 minute until cheese melts and everything is heated through, then remove from heat and let rest 2 minutes before serving.

Notes

Pat chicken dry before cooking to ensure a golden sear and prevent steaming.
