Chicken Katsu features panko breadcrumbs and a three-step dredging process to create a crispy golden crust. Pounding the chicken to an even ½ inch thickness ensures juicy, evenly cooked meat. Frying at 350°F for 3-4 minutes per side produces a crunchy, non-soggy coating.

Ingredients
  

  • 1.5 lbs chicken thighs or breasts boneless, pounded to ½ inch thickness
  • 0.5 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1.5 cups panko breadcrumbs
  • 1 teaspoon salt for seasoning chicken
  • 0.5 teaspoon black pepper for seasoning chicken
  • 1 cup vegetable oil for frying
  • tonkatsu sauce for serving
  • shredded cabbage optional, for serving
  • lemon wedges optional, for serving

Equipment

  • Meat mallet or rolling pin used to pound chicken to even thickness
  • Three shallow bowls for dredging station: flour, egg, panko
  • deep skillet for frying chicken in oil
  • Instant-read thermometer to check oil and chicken temperature
  • Wire rack to rest chicken and keep crust crisp

Method
 

  1. Place chicken between plastic wrap and pound with a meat mallet or rolling pin to ½ inch thickness. Season both sides with salt and pepper.

  2. Put flour in one shallow bowl, beat eggs in a second bowl, and spread panko in a third bowl. Line them up in that order.

  3. Dredge each piece in flour, shake off excess, dip in egg to coat completely, then press into panko on both sides. Press lightly so the breadcrumbs stick.

  4. Heat ½ inch of vegetable oil in a deep skillet over medium-high heat until it reaches 350°F on a thermometer. Fry chicken 3-4 minutes per side until golden brown and internal temperature hits 165°F. Fry 2 pieces max at once to avoid crowding.

  5. Transfer cooked chicken to a wire rack set over a baking sheet. Let rest 5 minutes so steam escapes and the crust stays crisp. Slice and serve with tonkatsu sauce.

Notes

  • Press panko lightly onto chicken to avoid clumps falling off during frying.
  • Pat chicken completely dry before dredging to prevent soggy breading.
  • Use a thermometer to maintain oil temperature at 350°F for crisp crust.
