Ingredients

  • 1 tablespoon Hoisin Sauce Use 1:1 ratio as substitute; sweeter and thicker texture
  • 1 tablespoon Soy Sauce Mix with ½ teaspoon sugar per 1 tablespoon oyster sauce; saltier, no thickness
  • 0.5 teaspoon Sugar Mix with soy sauce per 1 tablespoon oyster sauce
  • 1 tablespoon Mushroom Soy Sauce Use equal amounts for vegan, earthy, lighter salt substitute
  • 0.5 tablespoon Fish Sauce Use half the amount per 1 tablespoon oyster sauce; pungent and salty
  • 1 tablespoon Black Bean Sauce Use 1:1 ratio; fermented, richly savory, thicker than soy sauce
  • 1 tablespoon Vegetarian Mushroom Sauce Use equal amounts; mild earthy flavor, similar texture but lighter salt
  • 1 tablespoon Soy Sauce Mix with ½ tablespoon hoisin per 1 tablespoon oyster sauce; balanced salty-sweet
  • 0.5 tablespoon Hoisin Sauce Mix with soy sauce per 1 tablespoon oyster sauce

Method

  1. Choose your substitute based on the dish: hoisin for thick stir-fries, soy sauce + sugar for marinades, mushroom soy for vegan dishes, fish sauce for pungent umami, black bean for bold flavors, vegetarian mushroom or soy-hoisin mix for balanced alternatives.
  2. For mixes, stir ingredients (like soy sauce and sugar or soy and hoisin) in a small bowl until evenly combined and sugar is dissolved.
  3. Apply the substitute according to the specified ratios: for example, use equal parts hoisin, mushroom soy, black bean, or vegetarian mushroom sauces, half the fish sauce amount, or mixes as noted.
  4. Adjust seasoning by tasting during cooking; add soy sauce to balance sweetness or sugar to balance saltiness where needed.
  5. Incorporate the substitute into your dish during cooking, stirring to coat ingredients evenly and allow flavors to meld.
  6. Taste the finished dish and adjust if needed, remembering to add slowly to avoid over-salting or over-sweetening.

Notes

Mix soy sauce and sugar thoroughly before adding to prevent gritty granules in your dish.
