Ingredients

  • 1 Quinoa Use 1:1 ratio; rinse before cooking to remove bitterness. Nutty, earthier flavor; best for grain bowls and salads.
  • 1 Couscous Use 1:1 ratio; quick-cooking, softer texture; contains gluten; great for quick soaking and absorbing dressings.
  • 1 Amaranth Use 1:1 ratio; toast dry 2 minutes; use slightly less water for less sticky texture; good for porridges and binding.
  • 1 Bulgur Wheat Use 1:1 ratio; soak fine bulgur 15 mins and drain excess; contains gluten and has a chewy texture.
  • 1 Brown Rice Use 1:1 ratio; longer cook time (about 40 mins); chewier texture; instant brown rice shortens cook time.
  • 1 Teff Use 1:1 ratio; toast dry 1 minute; stir frequently; reduces liquid slightly to prevent too soft porridge.
  • 1 Polenta Use 1:1 ratio; stir constantly to avoid lumps; creamy texture; adds corn sweetness and grit.

Method

  1. Choose the substitute based on your recipe: quinoa or amaranth for small grains, couscous or bulgur if gluten is not a concern, brown rice for chewier texture, teff or polenta for creamy dishes.
  2. Prep grains as needed: rinse quinoa, soak bulgur and drain excess, toast amaranth and teff before cooking, or pour boiling water over couscous.
  3. Use a 1:1 substitution ratio for all millet substitutes unless otherwise noted.
  4. Adjust water when cooking amaranth or teff to prevent excessive stickiness or softness.
  5. Cook according to the substitute's typical method and timing, monitoring texture and flavor during cooking.
  6. Taste-test the dish before serving to ensure flavor balance and desired consistency.

Notes

Drain soaked bulgur before use to avoid mushy texture in your dish.
