Ingredients

  • 1 cup Greek Yogurt Thicker and less tangy than kefir; thin with a splash of water or milk if batter is too stiff.
  • 1 cup Buttermilk Milder tang than kefir, works cup for cup with no adjustments needed.
  • 0.75 cup Sour Cream Use ¾ cup sour cream per cup kefir; texture stays dense and rich, not pourable.
  • Thinned Yogurt (¾ cup yogurt + ¼ cup milk) Mix fresh before using; mild and creamy with pourable texture.
  • 1 cup Milk Kefir Same tang and slight fizz as plain kefir; shake before pouring.
  • 1 tablespoon Buttermilk Powder + 1 cup water Reconstitute powder before use; less fresh flavor and milder tang than fresh kefir.
  • 1 cup Coconut Yogurt Thick and tropical flavored; thin with plant-based milk if batter is too thick.

Method

  1. Choose your substitute based on recipe need: thick for baking or thin for smoothies.
  2. For thick batters, use Greek yogurt, sour cream, buttermilk, or coconut yogurt.
  3. For pourable texture, use thinned yogurt or milk kefir.
  4. Thin thicker substitutes (Greek yogurt, coconut yogurt) with water, milk, or plant-based milk as needed to achieve desired consistency.
  5. Use the appropriate substitution ratios: Greek yogurt 1:1, buttermilk 1:1, sour cream ¾ cup per cup, thinned yogurt ¾ cup yogurt plus ¼ cup milk, milk kefir 1:1, buttermilk powder 1 tablespoon plus 1 cup water, coconut yogurt 1:1.
  6. Shake milk kefir before use to mix settled components and preserve fizz.
  7. Mix yogurt and milk just before use for thinned yogurt to avoid separation.
  8. Adjust liquids slowly and test the consistency and flavor by taste as needed.

Notes

Thin Greek yogurt carefully to prevent batter from becoming too watery or clumpy.
