Ingredients

  • 1 cup goat cheese crumbled, for 1:1 ratio substitute
  • 1 cup ricotta salata firmer texture, milder flavor, 1:1 ratio
  • ¾ cup cotija drier crumble, saltier, use ¾ cup per 1 cup feta
  • 1 cup queso fresco milder, creamier, 1:1 ratio substitute
  • 1 cup halloumi squeaky, grillable texture, 1:1 ratio
  • 1 cup tofu feta marinated firm tofu, plant-based, 1:1 ratio
  • ¾ cup white cheddar sharper, drier crumbly cheese, ¾ cup per 1 cup feta

Equipment

  • Table or Counter For assembling and mixing cheese substitutes

Method

  1. For cold salads and roasted vegetables, goat cheese works well if you want a softer, tangier cheese that melts slightly into other ingredients.
  2. Use ricotta salata for a milder, less tangy flavor that holds its shape in pasta and salads.
  3. Cotija is saltier and drier, ideal for Mexican-inspired dishes like tacos and grilled corn; use less due to saltiness.
  4. Queso fresco stays soft and creamy with mild flavor, suitable for tacos, beans, and salads without adding tang.
  5. Halloumi uniquely withstands high heat without melting; slice thick and grill, fry, or bake for crisp edges and chewy texture.
  6. Marinated tofu feta mimics crumbly texture but depends on marinade for flavor; press tofu and marinate at least four hours.
  7. White cheddar adds sharpness and nutty flavor but melts more than feta; use mainly in baked dishes and casseroles.
  8. Choose substitutes based on whether your dish is served hot or cold: goat cheese for cold, halloumi for grilling or baking.

Notes

Drain marinated tofu before using to prevent soggy texture in dishes.
