Ingredients

  • 1 to Filet Mignon Same cut as tenderloin, portioned smaller; use 1:1 ratio for substitutions
  • 1 to Strip Steak Beefier flavor, firmer texture; use 1:1 ratio for substitutions
  • 1 to Sirloin Budget-friendly, robust beef flavor; use 1:1 ratio for substitutions
  • 1 to Top Round Lean cut needing slow heat; use 1:1 ratio but allow longer cooking
  • 1 to Porterhouse Two textures in one steak with tenderloin and strip sides; use 1:1 ratio

Method

  1. Choose your substitute based on cooking method and desired tenderness: tender cuts for quick searing, lean cuts for slow roasting or braising.
  2. For filet mignon, use a 1:1 ratio; cook with high heat for 3 minutes per side and rest for 5 minutes before serving.
  3. Use strip steak at a 1:1 ratio, slice thin against the grain for stir-fries, and allow 5 minutes resting time after cooking.
  4. For sirloin, apply a 1:1 substitution ratio; marinate 2–4 hours if desired and cook to medium-rare or medium to avoid toughness.
  5. Use top round with a 1:1 ratio but plan for longer cooking at low temperatures (275°F) to tenderize the meat properly.
  6. If using porterhouse, position the tenderloin side away from direct heat to cook uneven sides properly and avoid overcooking the tender side.
  7. Always slice tougher cuts against the grain thinly to improve tenderness and texture in your dish.

Notes

Slice sirloin thin against the grain to prevent toughness and ensure tenderness when substituting for beef tenderloin.
