Ingredients

  • 1 cup Compound Chocolate Use as a 1:1 substitute; melts smoothly sets firm with a sweeter, waxy finish.
  • 1 cup White Chocolate Chips Use as a 1:1 substitute; add ½ teaspoon coconut oil per cup for thinner coats; melt in short bursts with stirring.
  • 1 cup Modeling Chocolate Use as a 1:1 substitute; pliable and moldable, not pourable, ideal for decorations.
  • 1 cup Candy Melts Use as a 1:1 substitute; melts smoothly; add coconut oil or paramount crystals if thinning needed; available in colors and flavors.
  • 1 cup White Candy Coating Use as a 1:1 substitute; closest almond bark match; melts at 86-90°F and sets fastest among options.

Method

  1. Select a substitute based on the coating need: use compound chocolate or candy melts for dipping and coating or modeling chocolate for decorating and shaping.
  2. For compound chocolate and candy melts, melt slowly over low heat to avoid scorching or seizing; add coconut oil or paramount crystals to thin if necessary.
  3. For white chocolate chips, add ½ teaspoon coconut oil per cup and melt in 20-second bursts, stirring in between to achieve a thinner coating.
  4. Use modeling chocolate by warming gently with hands to soften, then mold or press into shape; it does not pour and is not suited for dipping.
  5. Apply substitutes at a 1:1 ratio by weight as directed, adjusting oil addition for thin coatings where advised; let dipped items set in refrigerator if needed.
  6. Taste and check the coating consistency; expect sweeter, waxy finish with compound chocolate, richer dairy with white chocolate chips, and fastest setting with white candy coating.

Notes

Add coconut oil slowly when thinning white chocolate chips to prevent a gritty or separated coating that won’t set properly.
