Vietnamese Bun Bo Hue served on a plate

Vietnamese Bun Bo Hue

No ratings yet
Bun Bo Hue is a traditional Central Vietnamese soup simmered for 2-3 hours to develop a deep, spicy, and aromatic broth with tender beef shank, pork hock, and chewy rice vermicelli noodles. Charring the lemongrass and onion before simmering adds smoky depth, while gentle simmering keeps the broth clear and meat tender. This recipe is perfect for a comforting weekend meal or feeding a crowd with authentic flavor.

Ingredients

  • 2 lbs beef shank bone-in
  • 1 lb pork hock
  • 0.5 cup pork blood cubes optional
  • 1 lb rice vermicelli noodles round "bun" style
  • 4 stalks lemongrass fresh, charred
  • 1 whole onion white, halved and charred
  • 3 slices galangal fresh
  • 2 tablespoon shrimp paste Vietnamese mam ruoc preferred
  • 0.25 cup fish sauce
  • 3 tablespoon chili oil Vietnamese style chili oil or plain as substitute

Equipment

  • Large stockpot Used for simmering broth and cooking meat.
  • Fine-mesh strainer Used to strain broth after simmering.
  • Knife Used to smash lemongrass stalks before adding to broth.

Method

  1. Hold lemongrass stalks and halved white onion directly over a gas flame or under a broiler for 2-3 minutes until blackened in spots. Smash lemongrass with the side of a knife to release oils.
4 stalks lemongrass, 1 whole onion
  2. Add charred lemongrass, onion, beef shank, pork hock, galangal, shrimp paste, and 12 cups water to a large stockpot. Bring to a boil over high heat, then immediately reduce heat to a bare simmer.
2 lbs beef shank, 1 lb pork hock, 4 stalks lemongrass, 1 whole onion, 3 slices galangal, 2 tbsp shrimp paste
  3. Simmer gently for 2.5 to 3 hours, skimming foam every 15 minutes during the first hour. Keep broth at a bare simmer to maintain clear broth and tender meat. The beef shank should pull apart easily and pork hock meat should slide off the bone.
  4. Remove beef shank and pork hock from broth and let rest for 10 minutes before slicing.
2 lbs beef shank, 1 lb pork hock
  5. Add fish sauce to broth one tablespoon at a time, tasting after each addition until balanced. Strain broth through a fine-mesh strainer to remove solids, then return broth to the pot.
    0.25 cup fish sauce
  6. Soak rice vermicelli noodles in cold water for 10 minutes, then drain well.
    1 lb rice vermicelli noodles
  7. Divide soaked noodles among bowls. Top with sliced beef and pork, ladle hot broth over, and drizzle with chili oil. Serve immediately with bean sprouts, lime wedges, and fresh herbs on the side.
1 lb rice vermicelli noodles, 2 lbs beef shank, 1 lb pork hock, 3 tbsp chili oil

Notes

  • Always maintain a bare simmer—avoid boiling to keep broth clear and meat tender.
  • Skim foam every 15 minutes during the first hour to ensure clean-tasting broth.
  • Store broth and solids separately in the fridge; reheat broth gently and add fresh noodles when serving to preserve texture.
