Ingredients
  

  • 1 lb carrots peeled and cut into 3-inch sticks
  • 2 red bell peppers seeded and cut into 3-inch sticks
  • 2 yellow bell peppers seeded and cut into 3-inch sticks
  • 1 lb mini cucumbers halved lengthwise
  • 1 pt cherry tomatoes optional — leave whole
  • 6 oz sugar snap peas trimmed
  • 6 radishes halved or quartered depending on size
  • 8 oz hummus store-bought or homemade
  • 8 oz tzatziki plain yogurt-based dip
  • 8 oz marinated olives or pickles pitted olives or cornichons
  • 4 oz feta cheese cubed (optional)
  • 0.25 cup extra virgin olive oil for drizzling roasted item
  • 0.5 teaspoon smoked paprika for hummus garnish
  • 0.25 cup roasted red peppers jarred, sliced — optional warm/roasted component
  • 0.5 cup roasted chickpeas store-bought or oven-roasted for crunch

Method
 

  1. Prepare three small bowls and spoon hummus, tzatziki, and olives/pickles into separate bowls; drizzle hummus with 1 teaspoon olive oil and sprinkle smoked paprika.
  2. Wash and dry all vegetables thoroughly; trim ends and cut carrots and peppers into uniform 3-inch sticks, halve mini cucumbers lengthwise.
  3. If using roasted chickpeas or roasted red peppers, warm them in a 350°F oven for 8-10 minutes until edges brown and crisp; transfer to a small bowl.
  4. Arrange dips in a triangle near the center of the board or sheet pan; place vegetables in grouped sections radiating outward by color and shape.
  5. Tuck smaller items (cherry tomatoes, radishes, olives) into gaps to fill space; scatter roasted chickpeas for texture contrast and sprinkle feta cubes in an accessible cluster.
  6. Chill the assembled platter on ice for up to 30 minutes before serving for buffet service; keep remaining cut vegetables refrigerated in a shallow airtight container lined with paper towel.

Notes

  • Cut vegetables within 4 hours of serving for best crunch; store cut items over paper towel in a shallow container.
  • Warm roasted components separately and add to the platter just before service to keep contrast between warm and cool items.
