Ingredients

  • 1 pound boneless chicken breast or thighs patted dry
  • 1 cup white or brown rice cooked according to package directions
  • 1 cup quinoa or cauliflower rice optional grain alternative
  • 1 cup bell peppers any color, sliced
  • ½ cup corn kernels fresh or canned
  • ½ cup black beans rinsed and drained canned
  • ½ cup red onion sliced
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder for seasoning chicken
  • ½ teaspoon garlic powder for seasoning chicken
  • ½ salt to taste
  • ¼ teaspoon black pepper to taste
  • 1 tablespoon fresh lime juice for garnish and brightness
  • ¼ cup fresh cilantro chopped, for garnish
  • ½ medium avocado sliced, for topping
  • ¼ cup salsa fresh or store-bought, for topping
  • ¼ cup sour cream or Greek yogurt for topping
  • 1 tablespoon oil for cooking chicken and vegetables

Equipment

  • Large skillet For cooking chicken and vegetables separately
  • Sheet pan For cooling cooked rice or grain

Method

  1. Cook the rice or grain according to package directions. Spread it on a sheet pan to cool completely so it stays fluffy instead of clumping when you assemble the bowls.
  2. Pat the chicken dry with paper towels and season both sides with cumin, chili powder, garlic powder, salt, and pepper. Heat a large skillet over medium-high heat with a thin layer of oil, then add the chicken and cook without moving it for 5 to 7 minutes per side until the internal temperature reaches 165°F.
  3. Remove the chicken from the pan and let it rest for 5 minutes. While it rests, toss the bell peppers, corn, and red onion in the same skillet over high heat for 4 to 5 minutes until charred in spots but still crisp.
  4. Slice the chicken into strips. Rinse the black beans and drain them well.
  5. Assemble the bowls by layering rice, sliced chicken, roasted vegetables, and black beans. Top with fresh cilantro, a squeeze of lime, avocado slices, salsa, and sour cream or Greek yogurt.

Notes

Pat the chicken dry before seasoning and cooking to ensure a golden sear and avoid steaming, which keeps the texture juicy and flavorful.
