Method
- Heat 1 tablespoon oil in a large skillet over medium-high heat. Add diced onion and bell peppers and cook until softened, about 5 minutes, stirring occasionally.
- Add zucchini, garlic, cumin, and chili powder and cook 2 minutes more. Drain excess liquid if the pan looks wet to keep filling cohesive.
- Stir in drained black beans and remove from heat. Mix until combined and season to taste, keeping filling slightly oversalted to balance tortillas and sauce.
- Warm tortillas wrapped in a damp paper towel in the microwave for 20-30 seconds to make them pliable for rolling.
- Spread ¼ cup enchilada sauce in the bottom of a 9x13 baking dish.
- Place ⅓ cup filling in the center of each tortilla, roll tightly, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce evenly over the rolled enchiladas. Sprinkle cheese on top if using.
- Bake uncovered at 350°F (175°C) for 25 minutes until edges are lightly crisp and sauce bubbles.
Notes
Drain excess liquid from sautéed vegetables before mixing to prevent soggy filling and mushy tortillas.
