Ingredients

  • 1 lb lamb or beef doner meat thinly sliced ⅛ inch
  • 4 pieces Turkish flatbread or pita fresh, split if pita
  • 1 cup tomato sauce preferably thick or reduced
  • 4 tablespoon butter
  • 2 cloves garlic minced, optional
  • 1 tablespoon olive oil
  • 1 cup full-fat plain yogurt serve cold
  • 2 green peppers sliced, optional
  • 2 tomatoes sliced, for garnish
  • 1 teaspoon sumac optional, for garnish

Equipment

  • Skillet For warming the meat
  • Oven For toasting flatbread at 400°F
  • Small saucepan For simmering tomato sauce
  • Small pan For browning butter

Method

  1. Preheat oven to 400°F (200°C). Place flatbread or split pita on a baking sheet and toast for 3-5 minutes until edges turn golden and crisp. Watch closely after 3 minutes to avoid burning.
4 pieces Turkish flatbread or pita
  2. Heat olive oil in a small saucepan over medium heat. Add minced garlic if using and cook 1 minute until fragrant. Pour in tomato sauce, stir, and simmer for 10 minutes until thickened and coating the back of a spoon.
1 cup tomato sauce, 2 cloves garlic, 1 tbsp olive oil
  3. In a separate small pan, melt butter over medium-low heat. Cook 3-4 minutes, swirling occasionally, until it turns light brown and smells nutty. Remove from heat immediately to prevent burning.
    4 tbsp butter
  4. Heat a skillet over medium heat. Add meat slices in a single layer and warm for 1-2 minutes per side until heated through and edges brown slightly. Work in batches to avoid overcrowding.
1 lb lamb or beef doner meat
  5. Place toasted bread on serving plates. Layer warm meat slices on top. Pour hot tomato sauce over the meat, then drizzle browned butter over everything. Dollop cold yogurt on the side or gently fold into the sauce off heat. Garnish with sliced tomatoes, green peppers, and sumac if using. Serve immediately while bread is still crisp.
1 lb lamb or beef doner meat, 4 pieces Turkish flatbread or pita, 1 cup tomato sauce, 4 tbsp butter, 1 cup full-fat plain yogurt, 2 green peppers, 2 tomatoes, 1 tsp sumac

Notes

  • Slice doner meat ⅛ inch thick to prevent dryness and chewiness when reheating.
  • Toast bread just before assembly to keep it crispy and avoid sogginess.
  • Add yogurt cold and serve on the side or fold gently off heat to avoid splitting.
