Tuna Steaks with Sesame Crust

Tuna steaks coated with a toasted sesame seed crust and seared quickly over medium-high heat create a nutty, crispy exterior while keeping the center pink and tender. This simple and fast recipe is perfect for weeknight dinners or meal prepping protein for the week.

Ingredients
  

  • 2 pieces fresh tuna steaks ahi or yellowfin, firm and bright red
  • 2 tablespoons white sesame seeds toasted in a dry pan
  • 2 tablespoons black sesame seeds toasted in a dry pan
  • 1 tablespoon soy sauce can substitute tamari or coconut aminos
  • 1 teaspoon sesame oil toasted or regular
  • 1 teaspoon fresh ginger grated finely
  • 0.5 teaspoon garlic optional, minced
  • to taste salt season after crusting
  • to taste black pepper season after crusting
  • to taste lemon or lime juice optional, add after cooking for brightness

  • Cast iron skillet Used for toasting sesame seeds and searing the tuna steaks
  • Meat thermometer To check tuna internal temperature for rare to medium-rare doneness

Method
 

  1. Heat a dry skillet over medium heat for 2-3 minutes. Add white and black sesame seeds, stirring constantly until fragrant and lightly golden. Remove from heat and pour onto a plate.

  2. Mix soy sauce, sesame oil, grated ginger, and garlic in a small bowl. Add the tuna steaks and turn to coat all sides. Let sit for 10-15 minutes at room temperature.

  3. Remove tuna from marinade and pat completely dry with paper towels. Press both sides firmly into the toasted sesame seeds until evenly coated. Season lightly with salt and pepper.

  4. Heat a cast iron skillet over medium-high heat for 3-5 minutes. Add a thin layer of oil. Place tuna steaks with 1 inch between pieces. Sear for 1.5-2 minutes per side for rare or 2.5-3 minutes per side for medium-rare, until crust is golden and crisp.

  5. Transfer tuna to a cutting board and let rest for 3-5 minutes to finish cooking without drying out. Slice against the grain into ½-inch pieces. The center should remain pink and the edges opaque. Optionally drizzle lemon or lime juice before serving.

Notes

  • Pat the fish dry before crusting to ensure sesame seeds stick and the crust crisps properly.
  • Use medium-high heat and do not move the fish while searing to form a perfect crust.
  • Let the tuna rest after cooking to allow carryover cooking and preserve tenderness.
