Traditional potato salad uses waxy potatoes boiled until just fork-tender and fully cooled before mixing with a tangy mayo-mustard dressing. This method ensures a creamy, stable texture with potato chunks that hold their shape and a balanced tangy flavor. Chill for at least an hour to let flavors meld.

Ingredients
  

  • 2 lbs potatoes Yukon Gold or red, cut into 1-inch chunks
  • 4 eggs hard-boiled and chopped into ½-inch pieces
  • 2 stalks celery diced into ¼-inch pieces
  • 0.5 cup pickles diced, or use relish
  • 0.5 cup onion yellow or red, diced and soaked in cold water for 10 minutes
  • 2 tablespoon fresh herbs parsley or dill, chopped, added just before serving
  • 0.75 cup mayonnaise full-fat for best texture
  • 2 tablespoon mustard yellow or Dijon
  • 0.5 teaspoon salt for dressing
  • 0.25 teaspoon black pepper for dressing
  • 1 teaspoon salt for boiling potatoes

Method
 

  1. Place potatoes cut into 1-inch chunks in a large pot and cover with cold water by 1 inch. Add 1 teaspoon salt and bring to a boil over high heat. Reduce heat to medium and simmer 15-20 minutes until potatoes are fork-tender but not falling apart. Drain immediately in a colander and spread on a tray to cool completely.

  2. Place eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil over high heat then remove from heat and cover. Let eggs sit for 10 minutes, then transfer to an ice bath for 5 minutes. Peel and chop into ½-inch pieces.

  3. Dice onion and soak in cold water for 10 minutes, then drain. Dice celery into ¼-inch pieces and dice pickles or relish. Chop fresh herbs and set aside for later.

  4. In a mixing bowl, whisk together mayonnaise, mustard, salt, and black pepper until smooth and creamy. Taste and adjust seasoning as needed.

  5. Add cooled potatoes, chopped eggs, drained onion, celery, and pickles to the dressing bowl. Fold gently with a spatula until everything is coated but potatoes remain intact. Cover and refrigerate at least 1 hour. Stir in fresh herbs just before serving.

Notes

  • Use waxy potatoes cut into uniform 1-inch chunks for even cooking and to prevent mushiness.
  • Cool potatoes completely before mixing with dressing to avoid breaking and oily texture.
  • Chill the salad for at least one hour to let flavors meld and potatoes absorb the dressing.
