  • 3 tablespoons lime juice freshly squeezed for bright acidity
  • 2 tablespoons water warm for dissolving palm sugar
  • 3-5 count red Thai bird's eye chilies adjust quantity to desired heat
  • 3 cloves garlic pounded but not pureed
  • 1 count shallot optional, finely chopped
  • 1 tablespoon palm sugar dissolved completely
  • 2 tablespoons cilantro fresh, chopped

Method
 

  1. Dissolve palm sugar in warm water and lime juice, stirring for 2-3 minutes until no grainy bits remain.

  4. Add chopped cilantro and shallot if using, mixing gently to combine.
