Method
- Pat shrimp dry with paper towels to remove surface moisture and ensure proper searing.
- Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Add sliced bell pepper, snap peas, and onion; stir-fry for 2 minutes until crisp-tender. Remove vegetables to a plate.
- Add shrimp in a single layer without crowding; cook 1-2 minutes per side until pink and opaque, then transfer to the plate with vegetables.
- Lower heat to medium; add minced garlic, grated ginger, and red pepper flakes to the pan. Stir constantly for 30 seconds until fragrant but not browned.
- Whisk together soy sauce, honey, and cornstarch slurry; pour into the pan. Bring to a simmer and cook 1 minute until thickened.
- Return shrimp and vegetables to the pan, toss to coat with sauce, and drizzle with sesame oil off heat.
Notes
Pat shrimp dry before cooking to ensure they sear well and avoid steaming, which keeps them tender and flavorful.
