Slow Cooker Chicken Pho uses bone-in chicken thighs simmered gently with toasted star anise, cinnamon, and charred aromatics for 6-8 hours to build rich, clear broth. Ingredients
  

  • 2 lbs chicken thighs bone-in
  • 1 onion large, halved
  • 4 inch ginger fresh piece, to be charred
  • 4 cloves garlic
  • 5 whole star anise
  • 2 sticks cinnamon sticks
  • 8 cups chicken broth
  • 3 tablespoons fish sauce add in last 15 minutes of cooking
  • 14 oz rice noodles dried
  • cilantro fresh, for serving
  • Thai basil fresh, for serving
  • bean sprouts fresh, for serving
  • lime wedges for serving
  • jalapeños sliced, for serving

  • Slow cooker For simmering broth and chicken
  • Dry skillet To toast star anise and cinnamon sticks
  • Broiler To char onion and ginger
  • cheesecloth or fine-mesh strainer To strain broth

Method
 

  1. Heat a dry skillet over medium heat and toast star anise and cinnamon sticks for 3-5 minutes, shaking the pan occasionally, until fragrant and slightly darkened. Remove and set aside.

  2. Place onion halves cut-side up and whole ginger on a foil-lined baking sheet. Broil for 5 minutes per side until deeply charred and blackened in spots. Let cool, then peel ginger.

  3. Add chicken thighs, toasted spices, charred onion and peeled ginger, garlic cloves, and chicken broth to the slow cooker. Set to low and cook for 6 to 8 hours until chicken is tender and shreds easily.

  4. Remove chicken and shred the meat, discarding bones and skin. Strain broth through cheesecloth or fine-mesh strainer into a clean pot. Stir in fish sauce, taste, and adjust seasoning with more fish sauce or salt if needed.

  5. Soak rice noodles in warm water for 20-30 minutes until pliable, then drain. Divide noodles among bowls, top with shredded chicken, ladle hot broth over, and serve with fresh cilantro, Thai basil, bean sprouts, lime wedges, and sliced jalapeños.

Notes

  • Toast spices before adding to the slow cooker to release essential oils for a more aromatic broth.
  • Char onion and ginger under the broiler to add caramelized depth and smoky flavor.
  • Cook noodles separately and add to bowls right before serving to prevent mushy texture.
