Slow Cooker Beef Bourguignon

Slow cooker beef bourguignon braises well-marbled beef chuck in red wine and beef broth until tender. Searing the meat before slow cooking builds depth of flavor, while adding vegetables halfway keeps their texture perfect. This hands-off dish is ideal for weeknight dinners and meal prep.

Ingredients
  

  • 2.5 lbs beef chuck roast cut into 2-inch cubes with visible marbling
  • 5 slices bacon chopped
  • 4 medium carrots cut into 2-inch pieces
  • 2 medium yellow onions quartered
  • 8 oz mushrooms halved, cremini or button
  • 4 cloves garlic minced
  • 4 sprigs fresh thyme tied with twine or loose, remove before serving
  • 2 bay leaves whole
  • 1.5 cups red wine preferably Burgundy or Pinot Noir
  • 2 cups beef broth low sodium
  • 1 tablespoon flour or cornstarch for slurry, mixed with cold water
  • 2 tablespoon butter for sautéing mushrooms

Equipment

  • Cast iron skillet Used to cook bacon and sear beef
  • Wooden spoon Used to scrape browned bits when deglazing
  • Slow cooker Braises beef and cooks stew slowly
  • Skillet To sauté mushrooms separately

Method
 

  1. Heat a cast iron skillet or heavy pan over medium-high heat. Add chopped bacon and cook 5-7 minutes until crispy. Remove bacon with a slotted spoon and set aside, leaving fat in the pan.

  2. Pat beef chunks dry with paper towels. Season with salt and pepper. Sear beef in batches in bacon fat, 2-3 minutes per side until deep brown crust forms. Avoid crowding pan. Transfer seared beef to slow cooker.

  3. Add ½ cup red wine to hot pan. Scrape browned bits with wooden spoon. Simmer 2 minutes to burn off alcohol, then pour over beef in slow cooker. Add remaining red wine, beef broth, garlic, thyme, bay leaves, and cooked bacon. Stir to combine. Cook on low 3-4 hours.

  4. Add carrots and onions to slow cooker. Stir gently to submerge. Continue cooking on low another 3-4 hours until beef reaches 190°F and shreds easily with a fork.

  5. Sauté mushrooms separately in a skillet with butter over medium heat 5-7 minutes until golden. Add mushrooms to slow cooker in last 30 minutes of cooking.

  6. Mix flour or cornstarch with cold water to make slurry. Stir into stew 15 minutes before serving to thicken sauce. Remove thyme sprigs and bay leaves before serving.

Notes

  • Sear meat before slow cooking to develop rich flavor and caramelized crust.
  • Add carrots and onions halfway through cooking to prevent mushy vegetables.
  • Sauté mushrooms separately to keep them firm and golden.
