Ingredients

  • 1 pound boneless skinless chicken thighs cut into thin strips
  • 2 inch fresh ginger grated
  • 3 tablespoons soy sauce low-sodium recommended
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil divided; some for drizzling
  • 8 ounces rice noodles or ramen cooked according to package directions
  • 1 tablespoon vegetable oil for cooking chicken

Equipment

  • Large skillet For cooking chicken and simmering sauce
  • Pot For boiling noodles
  • Whisk To mix marinade

Method

  1. Whisk soy sauce, rice vinegar, honey, and grated ginger in a bowl. Reserve half the marinade for finishing.
  2. Slice chicken thighs into thin strips and toss with remaining marinade. Let sit for 5 minutes while you cook the noodles.
  3. Cook noodles according to package directions, drain, and toss with a drizzle of sesame oil. Set aside.
  4. Heat a large skillet over medium-high heat, add vegetable oil, and cook chicken in a single layer for 3–4 minutes per side, until golden and cooked through.
  5. Pour reserved marinade over chicken and simmer for 1 minute until sauce thickens and coats the meat.
  6. Divide noodles into bowls, top with chicken, and drizzle with extra sesame oil before serving.

Notes

Reserve half the marinade and use it only after cooking to prevent contamination from raw chicken.
