Ingredients

  • 6 large eggs room temperature
  • 1.25 cups whole milk or half-and-half for richer custard
  • 1 cup cooked ham diced into ½-inch cubes and patted dry
  • 1 cup Gruyère cheese shredded; Swiss can be used as substitute
  • 0.5 cup all-purpose flour gradually whisked to avoid lumps
  • 2 tablespoon butter for greasing the baking dish
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon nutmeg optional
  • to taste fresh herbs chives or thyme, optional finishing touch

Equipment

  • Ovenproof baking dish Use an 8-9 inch glass or ceramic dish for baking
  • Whisk For mixing eggs, milk, and flour into batter

Method

  1. Preheat oven to 350°F. Butter an 8-9 inch ovenproof glass or ceramic baking dish thoroughly, spreading at least 1 tablespoon evenly over bottom and sides.
    2 tbsp butter
  2. In a large bowl, whisk together 6 eggs, 1¼ cups milk, and ½ cup flour until the batter ribbons off the whisk and is smooth, about 2 minutes. Add salt, pepper, and nutmeg if using, and whisk to combine.
6 large eggs, 1.25 cups whole milk, 0.5 cup all-purpose flour, 0.5 tsp salt, 0.25 tsp black pepper, 0.25 tsp nutmeg
  3. Pat 1 cup diced ham dry with paper towels, then scatter evenly in the buttered dish. Sprinkle 1 cup shredded Gruyère cheese evenly over the ham.
1 cup cooked ham, 1 cup Gruyère cheese
  4. Pour the whisked batter over the ham and cheese in the dish, tilting gently to distribute evenly. Bake at 350°F for 35-40 minutes until the edges are golden and set and the center barely jiggles. A knife inserted should come out mostly clean.
6 large eggs, 1.25 cups whole milk, 0.5 cup all-purpose flour, 1 cup cooked ham, 1 cup Gruyère cheese
  5. Remove the dish from the oven and let the clafoutis rest for 10 minutes to finish setting. Slice into wedges and serve warm, garnished with fresh chives or thyme if desired.
    to taste fresh herbs

Notes

  • Use firm cheeses like Gruyère or Swiss to avoid excess moisture and watery custard.
  • Pat ham dry before adding to prevent sogginess.
  • Allow baking dish to rest 10 minutes after removing from oven for perfect custard setting.
