Course: Appetizer

Ingredients

  • 2 bulbs garlic whole, roasted until golden and soft
  • 8 ounces cream cheese room temperature
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 cup Parmesan cheese freshly grated
  • ½ cup mozzarella cheese shredded
  • 2 tablespoons fresh parsley chopped, for garnish

Equipment

  • Oven Set at 325°F for roasting garlic and 350°F for baking the dip
  • Aluminum foil To wrap garlic bulbs for roasting
  • Mixing bowl To combine all ingredients
  • Shallow baking dish or small cast iron skillet To bake the dip until bubbly and golden

Method

  1. Preheat the oven to 325°F. Slice off the top quarter-inch of each garlic bulb to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 40–50 minutes until the cloves squeeze out like paste.
  2. Squeeze the roasted garlic into a mixing bowl. Add the cream cheese, mayonnaise, and sour cream, and stir until smooth and lump-free.
  3. Fold in the grated Parmesan and shredded mozzarella off the heat, stirring constantly until the cheese melts and the dip thickens slightly.
  4. Transfer the dip to a shallow baking dish or small cast iron skillet. Bake at 350°F for 10–12 minutes until bubbly and golden around the edges.
  5. Remove from the oven, let rest for 2 minutes, sprinkle with fresh parsley, and serve warm with crackers or toasted bread.

Notes

Roast garlic until golden and soft to avoid bitter flavor in the dip.
