Ingredients

  • 2 chicken breasts (skin-on, boneless)
  • 6 garlic cloves whole, peeled
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme divided
  • 1 teaspoon fresh rosemary divided
  • 1 teaspoon fresh parsley divided
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • lemon juice optional
  • lemon zest optional
  • butter optional
  • paprika optional

Equipment

  • Oven-safe skillet To roast the chicken and garlic together
  • Meat thermometer To check chicken internal temperature
  • Paper towels To pat chicken dry before cooking

Method

  1. Preheat oven to 400°F and pat chicken breasts dry with paper towels. Press down for 2-3 minutes to remove all surface moisture—this ensures crispy skin.
  2. Rub chicken with olive oil, salt, pepper, and half the fresh herbs. Make sure the skin side gets most of the seasoning—that's where the flavor develops.
  3. Place chicken skin-side up in an oven-safe skillet and add whole garlic cloves around the edges. Space breasts apart so they roast instead of steam.
  4. Roast for 20-25 minutes until internal temperature reaches 165°F. Add remaining herbs at the 15-minute mark so they stay fresh and don't burn.
  5. Remove from oven and let rest for 5 minutes before slicing. Squeeze roasted garlic cloves over the top or mash them into a quick pan sauce.

Notes

Pat chicken dry for 2-3 minutes before roasting to ensure crispy skin and prevent sogginess.
