Ingredients

  • 3 cups yuca flour spooned and leveled for accuracy
  • 2 large eggs at room temperature
  • ½ cup milk whole milk preferred
  • 4 oz queso fresco crumbled, fresh not aged
  • 2 tablespoon butter room temperature
  • 1 teaspoon baking powder optional for slight rise
  • ½ teaspoon salt adjust for cheese saltiness

Equipment

  • Oven For baking the cheese bread at 350°F
  • Mixing bowl Combine all dough ingredients
  • Baking sheet Line with parchment for baking
  • Parchment paper To line the baking sheet

Method

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine yuca flour, baking powder, and salt until evenly mixed.
3 cups yuca flour, 1 tsp baking powder, ½ tsp salt
  3. Add eggs, butter, milk, and crumbled queso fresco to the flour mixture. Stir until the dough is smooth, sticky, and moldable but not dry.
2 large eggs, 2 tbsp butter, ½ cup milk, 4 oz queso fresco
  4. Let the dough rest for 5 minutes to fully hydrate the yuca flour.
  5. Roll the dough into uniform 1.5-inch balls and place them 2 inches apart on the prepared baking sheet.
  6. Bake for 20-25 minutes until the edges turn golden and the tops puff slightly. The bread should feel firm but springy when pressed. Avoid opening the oven door during the first 15 minutes to ensure proper puffing.

Notes

  • Spoon and level yuca flour instead of scooping to prevent dryness.
  • Use fresh queso fresco for mild flavor; aged cheeses overpower the bread.
  • Preheat oven for at least 15 minutes before baking for even puffing.
