No ratings yet
Mushroom and spinach frittata delivers creamy eggs with tender vegetables baked in one skillet. Thoroughly sauté mushrooms to evaporate moisture before adding the egg mixture, then bake at 350°F until edges set but the center remains slightly jiggly. This protein-rich dish works well for breakfast, brunch, or a light dinner.

Ingredients

  • 6 large egg room temperature
  • 0.25 cup milk can substitute with cream
  • 0.5 cup parmesan cheese grated; can substitute with crumbled feta
  • 8 oz mushroom sliced (cremini or button mushrooms recommended)
  • 2 cups spinach fresh
  • 1 small onion or 2 shallots, diced
  • 2 tablespoons olive oil can substitute with butter
  • 0.5 teaspoon salt to season vegetables during sauté
  • 0.25 teaspoon black pepper

Equipment

  • 10-inch oven-safe skillet Used for sautéing and finishing frittata in the oven
  • Whisk For whisking eggs with milk and cheese

Method

  1. Preheat oven to 350°F. Heat a 10-inch oven-safe skillet over medium-high heat for 2 minutes until hot before adding oil.
  2. Add olive oil or butter to the hot skillet, then add mushrooms and diced onions. Sauté for 5-7 minutes until mushrooms are golden brown and all moisture has evaporated. Stir occasionally.
8 oz mushroom, 1 small onion, 2 tablespoons olive oil
  3. Add fresh spinach to the skillet and stir for 1-2 minutes until wilted and bright green. Season vegetables with salt and pepper, ensuring spinach coats mushrooms without excess liquid.
2 cups spinach, 0.5 teaspoon salt, 0.25 teaspoon black pepper
  4. Whisk together eggs, milk, and grated cheese in a bowl. Pour the mixture evenly over the vegetables in the skillet. Tilt the pan gently so eggs spread to the edges. Do not stir after pouring.
6 large egg, 0.25 cup milk, 0.5 cup parmesan cheese
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the edges puff and the center jiggles slightly when the skillet is shaken. Verify internal temperature reaches 160°F. Let rest 5 minutes before slicing.

Notes

  • Cook mushrooms thoroughly until moisture evaporates to prevent soggy frittata bottom.
  • Use room temperature eggs for smooth whisking and even cooking.
  • Resting the frittata before slicing helps it hold shape without crumbling.
