Middle Eastern Mujadara Lentils and Rice

No ratings yet
Mujadara is a hearty Middle Eastern dish combining brown lentils and rice simmered together until tender and topped with sweet, crispy caramelized onions. Partially cooking the lentils before adding rice ensures both finish perfectly at the same time in one pot.

Ingredients

  • 1 cup brown lentils can substitute with green lentils
  • 1 cup long-grain white rice or basmati rice; rinse 3-4 times until water runs clear
  • 3 cups water or vegetable broth adds savory depth if using broth
  • 1 teaspoon salt add to cooking liquid
  • 2 yellow onions large, thinly sliced
  • 3 tablespoons olive oil for caramelizing onions
  • 1 teaspoon ground cumin toast with onions
  • 0.5 teaspoon black pepper

Equipment

  • Medium saucepan For simmering lentils and rice
  • Large skillet For caramelizing onions
  • Fine-mesh sieve For rinsing rice
  • Fork For fluffing rice

Method

  1. Place rice in a fine-mesh sieve and rinse under cold water 3-4 times until the water runs clear, about 2 minutes total.
    1 cup long-grain white rice
  2. Add lentils, 3 cups water or broth, and 1 teaspoon salt to a medium saucepan, bring to a boil, then reduce to a simmer and cook uncovered for 10-15 minutes until lentils are just tender but still hold their shape.
1 cup brown lentils, 3 cups water or vegetable broth, 1 teaspoon salt
  3. Stir in the rinsed rice and ground cumin, cover with a tight-fitting lid, and simmer on low heat for 20 minutes without lifting the lid.
1 cup long-grain white rice, 1 teaspoon ground cumin
  4. While lentils and rice cook, heat 3 tablespoons olive oil in a large skillet over medium-low heat, add sliced onions, and cook 25-30 minutes, stirring every 5 minutes, until golden brown and crispy.
2 yellow onions, 3 tablespoons olive oil
  5. Remove pot from heat and let sit covered for 10 minutes, then fluff gently with a fork and top the dish with caramelized onions before serving.

Notes

  • Partially cooking lentils before adding rice helps both cook evenly.
  • Rinse rice thoroughly to prevent clumping and gummy texture.
  • Caramelize onions slowly over low heat for best sweetness and crispiness.
