Maple Pecan Granola Clusters

Maple Pecan Granola Clusters

No ratings yet
Crispy clusters stick together when maple syrup hits hot oats. The edges caramelize, the pecans toast, and everything binds into bite-sized chunks instead of loose granola dust. This granola clumps for a perfect texture in yogurt or milk with a buttery maple-pecan flavor.

Ingredients

  • rolled oats use old-fashioned oats, not instant or quick-cooking
  • chopped pecans rough chopped to about the size of the oats
  • maple syrup pure for best caramelization
  • vegetable oil light-flavored like grapeseed or canola
  • brown sugar packed light brown sugar
  • vanilla extract
  • 0.5 teaspoon cinnamon adds warmth without dominating
  • sea salt balances sweetness and brings out flavors

Equipment

  • Large baking sheet lined with parchment paper
  • Large mixing bowl to combine dry ingredients
  • Small mixing bowl to whisk wet ingredients
  • Spatula or hands for pressing granola mixture

Method

  1. Preheat oven to 300°F and line a large baking sheet with parchment paper. The low temperature prevents burning and allows the oats to dry slowly, which creates crispness.
  2. Mix oats, pecans, cinnamon, and salt in a large bowl. Stir until the dry ingredients are evenly distributed so the spices don't clump in one spot.
  3. Whisk maple syrup, oil, brown sugar, and vanilla in a small bowl until smooth. Pour over the oat mixture and stir thoroughly until every oat and nut is coated—this step determines how well the clusters hold together.
  4. Spread the mixture onto the prepared baking sheet and press firmly into an even layer. Use the back of a spatula or your hands to compact it; the more you press, the bigger the clusters.
  5. Bake for 40 minutes, stirring gently once at the halfway point. After baking, let the granola cool completely on the sheet without breaking it apart—this is when the clusters harden.

Notes

Pressing the oat mixture firmly before baking helps create large clusters and prevents grainy, loose granola pieces.
