No ratings yet
Labneh is a creamy, tangy dip made by straining full-fat Greek yogurt for 24-48 hours to achieve a thick, spreadable texture. Salted before straining and finished with a drizzle of olive oil and sprinkle of za’atar, this dish is perfect for snacks, breakfast, or entertaining.

Ingredients

  • 2 cups full-fat Greek yogurt provides thick, creamy base
  • 1 teaspoon salt added before straining for even seasoning
  • 1 tablespoon za’atar spice blend herby, nutty flavor for topping
  • 1 tablespoon olive oil extra virgin, drizzled on top
  • 0.5 teaspoon lemon juice added just before serving for brightness
  • fresh herbs (mint, parsley) optional garnish
  • 1 clove garlic minced, optional

Equipment

  • Fine-mesh strainer Used to strain yogurt
  • Cheesecloth or coffee filter Lining for the strainer to catch yogurt solids

Method

  1. Stir 1 teaspoon salt into 2 cups full-fat Greek yogurt until evenly mixed. This seasons the yogurt and helps draw out moisture during straining.
2 cups full-fat Greek yogurt, 1 tsp salt
  2. Line a fine mesh strainer with double-layer cheesecloth or coffee filter. Place the strainer over a bowl ensuring at least 2 inches clearance so the whey can drip freely without touching the yogurt.
  3. Pour the salted yogurt into the lined strainer, cover with plastic wrap and refrigerate for 24 to 48 hours. Check at 24 hours; the labneh should be thick and spreadable but not dry.
2 cups full-fat Greek yogurt, 1 tsp salt
  4. Scrape the thickened labneh from the cheesecloth into a shallow serving bowl. Spread it about ½ inch thick using the back of a spoon to create a smooth surface.
  5. Drizzle 1 tablespoon olive oil over the labneh. Sprinkle 1 tablespoon za’atar spice blend evenly on top. Add ½ teaspoon lemon juice just before serving for a bright finish.
1 tbsp za’atar spice blend, 1 tbsp olive oil, 0.5 tsp lemon juice

Notes

  • Keep straining in the fridge at temperatures below 40°F to avoid sourness.
  • Check labneh at 24 hours for ideal creamy thickness.
  • Use double-layer cheesecloth or coffee filter to catch solids but allow whey drainage.
