Italian Farro and Tomato Salad blends chewy farro, fresh tomatoes, and basil with a bright lemon dressing. Cooking farro until tender but not mushy and tossing while warm ensures flavors meld without sogginess.

Ingredients
  

  • 1.5 cups farro pearled or semi-pearled
  • 6 cups water for boiling
  • 1 teaspoon salt for boiling
  • 2 cups cherry tomatoes halved
  • 0.5 red onion thinly sliced, soaked 10 minutes in ice water
  • 1 cup fresh basil leaves torn by hand
  • 2 cloves garlic minced
  • 0.25 cup extra virgin olive oil
  • 2 tablespoon lemon juice or red wine vinegar, add last
  • 0.5 teaspoon salt for dressing
  • 0.25 teaspoon black pepper

Method
 

  1. Bring water and salt to a boil in a medium pot. Add farro, reduce heat to medium-low, and simmer 25-30 minutes until tender but still chewy.

  2. Drain farro through a colander and spread it on a sheet pan to cool and dry for 5 minutes.

  3. Halve cherry tomatoes and place in a large mixing bowl. Thinly slice red onion and soak in ice water for 10 minutes, then drain and pat dry. Mince garlic and tear basil leaves by hand.

  4. Add cooled farro, drained onion, and garlic to the bowl with tomatoes. Toss gently to mix without crushing the tomatoes.

  5. Drizzle olive oil over the salad and toss. Add lemon juice or red wine vinegar, salt, and black pepper, then toss again until well combined.

  6. Add torn basil leaves and toss once more. Cover and refrigerate for 30 minutes to let flavors meld before serving. Taste and adjust seasoning if needed.

Notes

  • Cook farro until tender but still chewy to avoid mushiness.
  • Drain and spread farro on a sheet pan to stop carryover cooking and prevent clumping.
  • Add acid last to prevent the salad from becoming soggy.
