Indonesian Sambal Oelek is a bright, coarse chili condiment made by pulsing fresh red chilies with vinegar, garlic, and salt. This quick no-cook recipe preserves vibrant heat and texture, perfect for spicing up rice, grilled chicken, or eggs.

Ingredients
  

  • 1 cup red chili peppers fresh, firm, roughly chopped with half the seeds retained
  • 3 cloves garlic fresh cloves
  • 1 tablespoon white vinegar
  • 1 teaspoon salt divided, half added before grinding and half after
  • 2 tablespoons water added gradually to adjust texture
  • 0.25 teaspoon sugar optional, balances acidity
  • shallots optional, minced finely and ground with chilies

Method
 

  1. Cut stems off red chilies and roughly chop into 1-inch pieces, keeping half the seeds for heat and texture.

  3. Pulse 5-7 times in short bursts until the chili skins break but small pieces remain visible, avoiding a smooth paste.

  4. Add water 1 tablespoon at a time while pulsing once or twice between additions until the mixture looks slightly moist but not runny.

  5. Stir in the remaining salt by hand, taste and adjust vinegar if needed, then let sit at room temperature for 15 minutes to meld flavors before transferring to a jar.

Notes

  • Pulse chilies briefly to keep coarse texture and avoid bitter paste.
  • Use sterilized jars and press plastic wrap on surface for longer shelf life.
  • Store in fridge up to 3 weeks; stir before each use to redistribute flavor.
