Ingredients
  

  • 2-3 lb pork loin roast even thickness
  • ⅓ cup honey
  • ¼ cup soy sauce
  • 2 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 6 cloves garlic minced
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoon olive oil
  • fresh herbs for garnish, optional

Method
 

  1. Rest the pork at room temperature for 20 minutes. Pat it dry with paper towels and season all sides with salt and black pepper to ensure proper browning.

  2. Heat olive oil in an oven-safe skillet over high heat until shimmering. Sear the pork loin for 2-3 minutes per side until golden brown on all surfaces to build flavor.

  3. In a bowl, mix honey, soy sauce, minced garlic, brown sugar, and apple cider vinegar. Then simmer the glaze in a small pan for 3-5 minutes until slightly thickened and coats the back of a spoon.

  4. Transfer the seared pork to a 375°F oven and roast for 35 minutes. Brush glaze over the meat and return to the oven for an additional 10 minutes until the internal temperature reaches 145°F at the thickest part.

  5. Remove the pork from the oven and tent with foil. Rest for 10 minutes before slicing against the grain into ½-inch slices. Drizzle with any remaining glaze and garnish with fresh herbs if desired.

Notes

  • Sear pork in hot oil before roasting to create a flavorful crust and avoid pale meat.
  • Add the glaze only in the last 10 minutes to prevent honey from burning and becoming bitter.
  • Rest the meat after cooking to keep juices inside and maintain tenderness when slicing.
