Garlic Toum Lebanese-Style served on a plate

Garlic Toum Lebanese-Style

No ratings yet
Garlic toum is a thick Lebanese garlic sauce made by slowly emulsifying oil into minced garlic using a food processor. The key is adding oil drop by drop to create a stable, spreadable paste that's perfect for grilled meats, roasted vegetables, and pita bread.

Ingredients

  • 1 cup garlic cloves peeled and minced finely
  • 1 teaspoon salt start with this amount and adjust to taste
  • 2 cups neutral oil vegetable, canola, or sunflower oil
  • 0.25 cup lemon juice split half early, half at end
  • 0.25 cup ice water add incrementally during blending
  • 1 egg white egg white optional for easier emulsification

Equipment

  • Food processor Used to emulsify garlic and oil
  • Squeeze bottle or slow pour container To add oil slowly

Method

  1. Pulse peeled garlic cloves in the food processor 3-5 times until finely chopped but not a paste. Add salt and half the lemon juice, then process for 30 seconds to form a smooth paste.
1 cup garlic cloves, 1 teaspoon salt, 0.25 cup lemon juice
  2. With food processor running on low speed, add the neutral oil drop by drop for the first 2 minutes to start a stable emulsion and thicken the mixture.
    2 cups neutral oil
  3. After incorporating the first third of the oil, add 1 tablespoon ice water. Continue alternating between a slow stream of oil and small increments of ice water until all oil and water are used, about 6-8 minutes total.
2 cups neutral oil, 0.25 cup ice water
  4. Add the remaining lemon juice through the feed tube while the processor runs, and blend for 30 seconds more until fully combined and airy.
    0.25 cup lemon juice
  5. Taste and add more salt if needed, or thin with extra ice water if too thick. The sauce should resemble thick mayonnaise and have a bright white color without oil separation.
1 teaspoon salt, 0.25 cup ice water

Notes

  • Add oil very slowly to prevent breaking the emulsion—start drop by drop for two minutes.
  • Use fresh whole garlic cloves and finely mince before blending to avoid grainy texture.
  • Chill the food processor bowl if the mixture becomes warm during blending to preserve emulsion stability.
