Ingredients

  • 4 eggs hard boiled
  • 2 cups green beans trimmed and blanched
  • 2 cups potatoes peeled, cubed, boiled until fork-tender
  • 1 cup cucumber sliced
  • 1 cup bean sprouts fresh
  • 1 block firm tofu pressed, cut into 1-inch cubes
  • 2 tablespoons oil for frying tofu
  • ½ cup peanut butter natural, unsweetened
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon tamarind paste or substitute 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 2 cloves garlic minced
  • ¼ cup warm water plus more to adjust sauce consistency
  • ¼ cup fried shallots for garnish
  • 1 tablespoon lime juice for finishing squeeze
  • 1 teaspoon chili paste optional, for sauce heat

Equipment

  • Pot For boiling eggs and potatoes
  • Frying pan For frying tofu
  • Whisk For mixing peanut sauce
  • tongs or slotted spoon For blanching vegetables and frying tofu

Method

  1. Place eggs in a pot, cover with cold water by 1 inch, and bring to a simmer. Cook eggs for 9 minutes. Simultaneously, boil peeled, cubed potatoes in a separate pot for 10-12 minutes until fork-tender. Drain potatoes and eggs, then shock eggs in ice water for 5 minutes before peeling.
    4 eggs, 2 cups potatoes
  2. Bring a pot of salted water to a rolling boil. Add trimmed green beans and cook for 2-3 minutes until bright green and crisp-tender. Drain and immediately plunge into ice water for 1 minute to stop cooking. Drain well and pat dry with towels.
    2 cups green beans
  3. Pat tofu dry with paper towels and cut into 1-inch cubes. Heat oil in a frying pan over medium-high heat to 350°F. Fry tofu cubes 3-4 minutes per side until golden and crispy. Drain on paper towels.
1 block firm tofu, 2 tablespoons oil
  4. Whisk together peanut butter, soy sauce, tamarind paste, brown sugar, minced garlic, and warm water. Add more warm water 1 tablespoon at a time until sauce coats a spoon thickly without dripping off. Optionally stir in chili paste for heat.
½ cup peanut butter, 3 tablespoons soy sauce, 1 tablespoon tamarind paste, 1 tablespoon brown sugar, 2 cloves garlic, ¼ cup warm water, 1 teaspoon chili paste
  5. Arrange blanched vegetables, boiled potatoes, sliced cucumber, bean sprouts, fried tofu, and halved hard-boiled eggs on a platter. Drizzle peanut sauce over everything just before serving, then top with fried shallots and a squeeze of lime juice.
2 cups green beans, 2 cups potatoes, 1 cup cucumber, 1 cup bean sprouts, 1 block firm tofu, 4 eggs, ½ cup peanut butter, ¼ cup fried shallots, 1 tablespoon lime juice

Notes

  • Toast raw peanuts for 5 minutes on medium heat to deepen sauce flavor before making peanut butter or use natural peanut butter.
  • Press tofu 10 minutes between towels to remove water for crispier frying results.
  • Assemble the salad just before serving to keep vegetables crisp and prevent sogginess.
