Fragrant Vegetable Biryani

No ratings yet
Layered basmati rice with sautéed vegetables and whole spices slow-cooked in a sealed pot creates fluffy, aromatic vegetable biryani. Soaking the rice for 30 minutes prevents clumping, while tempering spices in ghee releases fragrant oils. The dum method steams the rice evenly without stirring, making a flavorful weeknight meal in under an hour.

Equipment

  • Heavy-bottomed pot or Dutch oven Used for tempering spices and slow cooking biryani

2 cups basmati rice, 0.5 cup fresh mint leaves, 0.5 cup fresh cilantro, 10-15 strands saffron
  5. Cook on lowest heat setting for 25-30 minutes without opening the lid, allowing the rice and vegetables to steam evenly.
  6. Turn off heat and let the pot rest covered for 10 minutes. Remove foil and lid, then gently fluff rice from bottom to top with a fork, turning once to mix layers. Serve immediately while steam rises.

Notes

  • Soak basmati rice for 30 minutes to remove surface starch and prevent clumping.
  • Use a heavy-bottomed pot or Dutch oven to avoid scorching the bottom layer.
  • Do not stir after layering; the steam cooks rice evenly and keeps grains separate.
