Egg and Tomato Breakfast Skillet served on a plate

Egg and Tomato Breakfast Skillet

No ratings yet
Eggs cracked into a skillet with sautéed tomatoes, onions, and garlic create a flavorful one-pan breakfast with runny yolks and tender tomato chunks. The key is simmering the tomatoes uncovered to thicken before gently cooking eggs under a cover, resulting in perfectly set whites without rubbery texture.

Ingredients

  • 4 large eggs room temperature
  • 2 cups fresh diced tomatoes or 1 can (14 oz) diced tomatoes
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil extra virgin preferred
  • 0.5 teaspoon salt adjust to taste
  • 0.25 teaspoon black pepper
  • chili flakes optional, to taste
  • 2 tablespoons fresh basil or parsley chopped
  • 0.25 cup crumbled feta or shredded mozzarella optional

Equipment

  • Oven-safe skillet Used to cook the tomato base and eggs all in one pan
  • lid or foil To cover skillet and gently set eggs

Method

  1. Warm 2 tablespoons olive oil in an oven-safe skillet over medium heat for 1-2 minutes. Add diced onion and cook for 4-5 minutes until translucent and edges soften. Do not rush this step to avoid crunchy onions.
  2. Stir in diced tomatoes with their juice, salt, and black pepper. Let the mixture simmer uncovered for 5-7 minutes, stirring occasionally, until the liquid reduces and tomatoes become a thick, chunky sauce.
  3. Add minced garlic and stir for 1 minute until fragrant but not browned. Maintain medium heat to prevent burning the garlic.
  4. Lower heat to medium-low. Use a spoon to make 4 shallow wells in the tomato mixture, spacing them evenly. Crack one egg into each well. Sprinkle optional cheese over the eggs if using.
  5. Cover the skillet with a lid or foil. Cook for 3-5 minutes until the egg whites are set but the yolks remain soft and jiggly. Remove from heat, sprinkle chopped fresh basil or parsley, and serve immediately.

Notes

  • Use medium heat to prevent burning garlic and onions.
  • Simmer tomatoes uncovered to reduce liquid and prevent soggy eggs.
  • Lower heat and cover skillet when cooking eggs to keep yolks runny and whites tender.
