Crockpot Chicken Vindaloo

No ratings yet
Crockpot Chicken Vindaloo slow-cooks chicken thighs in tangy vinegar-spiked spices until fork-tender. Adding potatoes midway prevents them from turning mushy while the sauce thickens naturally, making this dish perfect for hands-off weeknight dinners or meal prep.

Ingredients

  • 2 lbs chicken thighs bone-in or boneless
  • 3 tablespoon vindaloo curry paste or spice mix
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 large onion diced
  • 2 medium potatoes cubed
  • 2 tablespoon tomato paste
  • 0.25 cup white vinegar add in last 30 minutes
  • 1 cup chicken broth
  • 1 tablespoon brown sugar
  • 0.5 cup coconut milk optional, stir in at the end

Equipment

  • Skillet To brown the chicken before slow cooking
  • Crockpot For slow cooking the dish

Method

  1. Heat 1 tablespoon oil in a skillet over medium-high heat and sear chicken thighs 3-4 minutes per side until golden. Transfer to the crockpot.
    2 lbs chicken thighs
  2. Add diced onion, minced garlic, grated ginger, vindaloo spice mix, tomato paste, brown sugar, and chicken broth to the crockpot. Stir to coat chicken evenly.
3 tbsp vindaloo curry paste, 4 cloves garlic, 1 tbsp fresh ginger, 1 large onion, 2 tbsp tomato paste, 1 tbsp brown sugar, 1 cup chicken broth
  3. Cover and cook on low for 3 hours until chicken registers 145°F on an instant-read thermometer. Avoid lifting lid during this time.
  4. Stir in cubed potatoes, cover, and cook another 2-3 hours until chicken hits 165°F and potatoes are fork-tender.
    2 medium potatoes
  5. Remove lid, stir in white vinegar, and cook uncovered for 20-30 minutes to reduce sauce. Stir in coconut milk if using, then taste and adjust seasoning with salt or sugar.
0.25 cup white vinegar, 0.5 cup coconut milk

Notes

  • Brown chicken thighs before slow cooking for deeper flavor.
  • Add vinegar in the last 30 minutes to keep its tang fresh.
  • Resist lifting the lid during the first 3 hours to avoid heat loss and extended cooking time.
