Crockpot Chicken Vegetable Soup served on a plate

Crockpot Chicken Vegetable Soup

No ratings yet
Crockpot Chicken Vegetable Soup combines tender boneless chicken with carrots, celery, onion, potatoes, and a savory low-sodium chicken broth slow-cooked for 4-6 hours. The slow cooker tenderizes the chicken fully while softening the vegetables without becoming mushy. Fresh herbs added toward the end brighten the flavor and add fresh aroma.

Ingredients

  • 1.5-2 lbs boneless skinless chicken breasts or thighs
  • 3 medium carrots chopped into ½-inch pieces
  • 3 stalks celery chopped
  • 1 medium onion diced
  • 2 medium potatoes cubed, Yukon Gold or russet preferred
  • 1 cup green beans trimmed, added in last hour
  • 1 cup diced tomatoes optional
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 2 tablespoon fresh parsley chopped, added in last 15 minutes
  • 6 cups low-sodium chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon oil for optional browning of chicken

Equipment

  • Crockpot (slow cooker) Used for all-day slow cooking of soup
  • Skillet Optional, for browning chicken before slow cooking

Method

  1. Heat 1 tablespoon oil in a skillet over medium-high heat. Sear the chicken breasts or thighs 3-4 minutes per side until golden brown. Then transfer the chicken to the crockpot.
1.5-2 lbs boneless skinless chicken, 1 tbsp oil
  2. Add the chopped carrots, celery, diced onion, cubed potatoes, minced garlic, dried thyme, salt, and black pepper to the crockpot on top of the chicken.
3 medium carrots, 3 stalks celery, 1 medium onion, 2 medium potatoes, 4 cloves garlic, 1 tsp dried thyme, 1 tsp salt, 0.5 tsp black pepper
  3. Pour the low-sodium chicken broth over the vegetables and chicken. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken reaches an internal temperature of 165°F and potatoes are fork-tender.
    6 cups low-sodium chicken broth
  4. Remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken to the crockpot and stir to combine with the vegetables and broth.
    1.5-2 lbs boneless skinless chicken
  5. Add the trimmed green beans and chopped fresh parsley to the crockpot during the last 60 minutes of cooking. Taste the broth and adjust salt and pepper if needed before serving.
1 cup green beans, 2 tbsp fresh parsley, 1 tsp salt, 0.5 tsp black pepper

Notes

  • Brown the chicken first for richer broth flavor and golden color.
  • Chop vegetables into uniform ½-inch pieces to ensure even cooking and prevent mushy texture.
  • Add delicate vegetables like green beans during the last hour of cooking to maintain texture.
