A straightforward recipe for glossy chocolate-covered strawberries using 8 ounces of semi-sweet chocolate and an optional white chocolate drizzle. We use room-temperature, dry berries and gentle melting to produce a firm, snappy shell that sets in 10–15 minutes.

Ingredients
  

  • 12 strawberries medium, firm-ripe with stems intact
  • 8 oz semi-sweet chocolate finely chopped or chocolate chips
  • 2 oz white chocolate for drizzle, finely chopped
  • 1 tablespoon neutral oil vegetable or coconut; optional to thin melted chocolate
  • flaky sea salt optional finishing sprinkle
  • 1 tablespoon unsalted butter optional—do not use salted; small knob can smooth dark chocolate (alternative to oil)

Equipment

  • Mixing bowl heatproof for double boiler or microwave melting
  • Saucepan for double boiler if using
  • Baking sheet lined with parchment paper
  • fork or dipping tool for shaking off excess chocolate
  • small piping bag or zip-top bag for white chocolate drizzle

Method
 

  1. Wash strawberries and pat completely dry with paper towels; rest on a rack at room temperature for 10 minutes to remove any residual moisture.
  2. Place chopped semi-sweet chocolate in a dry heatproof bowl and melt over simmering water (double boiler) stirring until smooth, or microwave in 20–30 second bursts at 50% power, stirring between bursts; remove from heat at 100–105°F and stir until glossy.
  3. Stir in up to 1 tablespoon neutral oil or 1 tablespoon unsalted butter if needed to loosen chocolate for dipping; test with one strawberry for coating consistency.
  4. Hold a strawberry by the stem, dip two-thirds into the melted chocolate, lift and allow excess to drip off, then place on a parchment-lined baking sheet; repeat with remaining berries, spacing them in a single layer.
  5. Melt white chocolate similarly, transfer to a small piping bag, and drizzle over the dark-coated berries while shells are tacky; optionally sprinkle flaky sea salt immediately after drizzling.
  6. Chill the sheet pan uncovered in the refrigerator for 10–15 minutes until the chocolate is firm to the touch, then transfer to a shallow container with parchment layers in between if storing; serve within 24–48 hours.

Notes

  • Ensure berries are completely dry and at room temperature to prevent chocolate seizing.
  • Set berries single-layer on parchment to avoid smudges and condensation.
