Chinese Savory Soy Milk with Youtiao

This traditional Chinese savory soy milk is made from soaked dried soybeans blended and gently simmered for a smooth, delicate flavor. Served warm with crispy youtiao on the side, it makes a comforting breakfast that is simple to prepare and satisfying.

Ingredients
  

  • 1 cup dried soybeans rinsed and soaked 8-12 hours
  • 6 cups water fresh for blending soybeans
  • 3 to 4 slices fresh ginger sliced thin
  • 2 scallions chopped
  • 1 teaspoon salt
  • 0.5 teaspoon white pepper
  • 1 tablespoon soy sauce optional, add after cooking to avoid curdling
  • to taste chili oil optional, add at table
  • 4-6 pieces youtiao fresh fried dough sticks

Method
 

  1. Soak 1 cup dried soybeans in 4 cups water for 8-12 hours at room temperature. Drain and rinse the soaked beans until water runs clear to remove excess starch.

  2. Blend the soaked soybeans with 6 cups fresh water on high speed for 2-3 minutes until completely smooth and uniform, scraping down the sides halfway through.

  3. Strain the blended mixture through a fine-mesh strainer or nut milk bag into a large pot, pressing the pulp to extract all liquid. Then strain a second time through cheesecloth or a clean dish towel for a silky texture.

  4. Bring the strained soy milk to a gentle simmer over medium-low heat with sliced ginger, stirring occasionally to prevent sticking. Let it bubble softly for 20 minutes until thickened and raw bean smell dissipates.

  5. Remove from heat and stir in salt, white pepper, and chopped scallions. Taste and adjust seasonings, then ladle into bowls and serve immediately with warm youtiao on the side for dipping.

Notes

  • Soak soybeans 8-12 hours to soften completely for smooth blending.
  • Strain soy milk twice for the silkiest texture and to remove pulp.
  • Simmer gently at medium-low heat to avoid bitterness from hard boiling.
