Ingredients

  • Cooked shredded chicken Use rotisserie chicken to save time
  • Black beans Optional, rinsed and drained if used
  • Flour or corn tortillas Tear or cut into pieces for layering
  • Shredded cheddar cheese Sharp cheddar preferred for flavor
  • Shredded Monterey Jack cheese Use a blend of cheddar and Monterey Jack
  • Sour cream Mixed into chicken for creaminess
  • Salsa or diced tomatoes with green chilies Use medium salsa, drain if watery
  • Taco seasoning Store-bought or homemade blend

Equipment

  • 9x13 inch baking dish Grease before layering ingredients
  • Oven Preheat to 350°F
  • Mixing bowl For combining chicken mixture

Method

  1. Preheat oven to 350°F and grease a 9x13-inch baking dish.
  2. Mix shredded chicken, sour cream, half the salsa, and taco seasoning in a large bowl until evenly coated.
  3. Arrange torn or cut tortilla pieces in an even layer on the bottom of the greased dish, covering the surface.
  4. Spread half the chicken mixture over the tortillas, then sprinkle with half the shredded cheese blend.
  5. Repeat layers: tortillas, remaining chicken mixture, remaining cheese, then pour the remaining salsa evenly on top.
  6. Cover the dish with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until cheese is golden and bubbling.

Notes

Drain excess liquid from salsa before mixing to prevent a soggy casserole.
