Ingredients
  

  • 2 cup all-purpose flour scoop-and-level
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon salt adjust if using salted butter or cheese
  • 0.5 teaspoon black pepper freshly ground
  • 0.25 cup unsalted butter cold, cubed (plus 2 tablespoon melted for brushing)
  • 0.25 cup vegetable shortening cold, cubed (optional: use all butter instead)
  • 1 cup sharp cheddar cheese grated and chilled
  • 3 tablespoon fresh chives finely chopped
  • 1 cup buttermilk cold
  • 1 large egg for brushing (optional)

Method
 

  1. Preheat oven to 425°F and place a rack in the center; line a rimmed baking sheet with parchment.
  2. Whisk flour, baking powder, baking soda, salt, and pepper in a large bowl until combined.
  3. Cut cold butter and shortening into flour with a pastry cutter or two forks until pea-size crumbs remain and mixture looks sandy with visible butter bits.
  4. Toss chilled grated cheddar with 1 tablespoon flour, then stir into dry mix with chopped chives.
  5. Pour cold buttermilk into dry ingredients and gently fold with a spatula until dough comes together but still shaggy; do not overmix.
  6. Turn dough onto a lightly floured surface, fold over itself 2 times to create layers, pat to 1-inch thickness, and cut into eight rounds with a 2.5-inch cutter; place on prepared sheet with sides touching.
  7. Brush tops with beaten egg or 2 tablespoons melted butter and bake at 425°F for 12-15 minutes until tops are golden brown and edges set.
  8. Transfer to a wire rack and brush with remaining melted butter; serve warm.

Notes

  • Chill grated cheddar and toss with flour to reduce greasiness and sinking.
  • Fold dough gently 2 times for flaky layers; avoid kneading.
  • Bake at high heat (425°F) for quick oven spring and golden tops.
