Ingredients

  • 2 cups rotisserie chicken shredded, skin removed
  • ½ cup Buffalo hot sauce Frank's RedHot preferred
  • 8 ounces cream cheese softened at room temperature
  • 1 ½ cups sharp cheddar cheese shredded
  • ½ cup blue cheese dressing
  • 2 tablespoons butter
  • ½ teaspoon garlic powder

Equipment

  • Oven-safe skillet Used for mixing and baking the dip

Method

  1. Soften the cream cheese at room temperature for 20 minutes so it blends smooth without lumps. Preheat your oven to 350°F (175°C) and keep an oven-safe skillet ready on the stovetop.
  2. Melt the butter in a ten-inch oven-safe skillet over medium heat, then add the softened cream cheese and stir for two minutes until it turns creamy and smooth, with no cold chunks remaining.
  3. Stir in the Buffalo sauce, blue cheese dressing, and garlic powder, mixing for one minute until the sauce looks glossy and fully combined.
  4. Fold in the shredded chicken and half the cheddar cheese, stirring gently until the chicken is coated and the cheese begins to melt into the sauce.
  5. Sprinkle the remaining cheddar on top in an even layer, then transfer the skillet to the oven and bake for 20 minutes, until the edges bubble and the top turns lightly golden.
  6. Remove the skillet from the oven and let it rest for three minutes so the cheese sets slightly and the dip thickens enough to scoop cleanly.

Notes

Soften cream cheese first to ensure a smooth, lump-free dip texture.
