Berry Chia Pudding

No ratings yet
Berry chia pudding is a simple, no-cook breakfast or snack that thickens naturally as chia seeds gel with milk. Whisking the seeds vigorously and layering with pureed and whole berries creates a smooth, textured treat that keeps well in the fridge for up to four days.

Ingredients

  • 3 tablespoons chia seeds black or white
  • 1 cup milk dairy or plant-based, e.g. full-fat or coconut milk preferred for creaminess
  • 1 tablespoon sweetener maple syrup, honey, or agave
  • 0.5 teaspoon vanilla extract pure or imitation
  • 1 cup mixed berries fresh or frozen, thawed and drained if frozen
  • 1 teaspoon lemon juice optional, brightens berry flavor
  • 2 tablespoons nuts optional, add texture contrast
  • 1 tablespoon coconut flakes optional, add texture contrast

Method

  1. Whisk 3 tablespoons chia seeds, 1 cup milk, 1 tablespoon sweetener, and ½ teaspoon vanilla extract in a bowl vigorously for 2 full minutes until no clumps remain.
3 tablespoons chia seeds, 1 cup milk, 1 tablespoon sweetener, 0.5 teaspoon vanilla extract
  2. Cover and refrigerate the mixture for 30 minutes. After 30 minutes, stir once to redistribute any seeds that settled to the bottom.
  3. Blend half of the berries (½ cup) until smooth, leaving the other half whole for added texture. Optionally stir in 1 teaspoon lemon juice to the berries.
1 cup mixed berries, 1 teaspoon lemon juice
  4. Spoon half of the chia pudding into serving jars or bowls, layer with pureed berries, then top with remaining pudding and the whole berries.
    1 cup mixed berries
  5. Cover and refrigerate for at least 3 hours and 30 minutes more (4 hours total minimum) until pudding is thick and fully gelled.

Notes

  • Whisk vigorously for full 2 minutes to prevent clumps.
  • Soak pudding at least 4 hours or overnight for best gel texture.
  • Stir once after 30 minutes chilling to redistribute settled seeds.
