Beef Stroganina Russian-Style served on a plate

Beef Stroganina Russian-Style

No ratings yet
Beef stroganina is a traditional Russian appetizer of thinly sliced raw frozen beef served icy cold with simple seasonings like salt, lemon juice, and horseradish. The key is freezing lean cuts like sirloin or tenderloin solid for 12-24 hours, then slicing razor-thin just before serving for a melt-in-your-mouth texture.

Ingredients

  • 1 lb beef sirloin or tenderloin lean cut, freeze solid
  • 2 teaspoon coarse salt sprinkle over slices before serving
  • 1 teaspoon black pepper seasoning
  • 2 tablespoon fresh lemon juice drizzle just before serving
  • 2 tablespoon finely grated horseradish fresh for sharp pungent heat
  • 0.25 cup chopped onion optional, raw for sharp bite
  • 2 tablespoon fresh dill optional, chopped fine
  • 0.25 cup cold vodka or ice water serve chilled alongside slices
  • sour cream optional, for serving

Equipment

  • Freezer To freeze the beef solid for slicing
  • Sharp slicing knife Razor-sharp knife needed to slice frozen beef thinly
  • Cutting board Chilled cutting surface for slicing frozen beef
  • Chilled serving platter Keep slices cold and firm before serving

Method

  1. Freeze the beef sirloin or tenderloin uncovered on a tray in the freezer for 12 to 24 hours until fully rock-hard. Freezing uncovered prevents ice crystals from forming on the surface.
1 lb beef sirloin or tenderloin
  2. Sharpen and hone a razor-sharp slicing knife just before slicing. Place the frozen beef on a chilled cutting board and slice 1-2mm thick slices quickly to keep the meat frozen.
  3. Arrange the thin slices flat on a chilled serving platter or layer with parchment paper if stacking. Keep the platter chilled in the fridge until ready to season and serve.
  4. Sprinkle coarse salt first over the beef slices, then drizzle fresh lemon juice and add finely grated horseradish. Add chopped onion and fresh dill if using for extra flavor.
2 tsp coarse salt, 2 tbsp fresh lemon juice, 2 tbsp finely grated horseradish, 0.25 cup chopped onion, 2 tbsp fresh dill
  5. Serve immediately with small glasses of chilled vodka or ice water on the side for rinsing between bites. Optionally serve with sour cream.
0.25 cup cold vodka or ice water, sour cream

Notes

  • Freeze beef uncovered to avoid surface ice crystals and ensure smooth slicing.
  • Use a razor-sharp knife to cut clean translucent slices; dull knives tear the meat.
  • Season just before serving to maintain the texture and avoid sogginess.
