Total Time 18 minutes
Servings: 4 flatbreads
Course: Dinner

Ingredients

  • 4 flatbreads or naan preferably thin to achieve crisp texture
  • olive oil for brushing flatbreads
  • 2 cups cooked chicken shredded, rotisserie recommended
  • ½ cup BBQ sauce balanced flavor, thin spread layer
  • 1 ½ cups shredded mozzarella cheese divided in portions for layering
  • ½ cup shredded cheddar cheese
  • ¼ cup red onion thinly sliced
  • fresh cilantro chopped, added after baking
  • green onions sliced, added after baking

Equipment

  • Baking sheet Line with parchment for easy cleanup
  • Oven Preheat to 425°F for crisping flatbread and melting cheese
  • Mixing bowl For tossing shredded chicken with BBQ sauce
  • Pizza cutter or knife For slicing the finished flatbread pizzas

Method

  1. Preheat oven to 425°F and line a baking sheet with parchment. Place flatbreads on the sheet and brush lightly with olive oil.
  2. Toast flatbreads for 3 minutes until edges just start to firm. Remove from oven and let cool 1 minute so toppings do not slide off.
  3. Mix shredded chicken with BBQ sauce in a bowl. Spread a thin layer of extra sauce on each flatbread, then sprinkle half the mozzarella cheese.
  4. Divide chicken evenly across flatbreads and scatter red onion slices on top. Add remaining mozzarella and cheddar cheese, then bake 8-10 minutes until cheese bubbles and edges turn golden.
  5. Remove from oven and let rest 2 minutes. Garnish with cilantro and green onions, slice with a pizza cutter, and serve immediately.

Notes

Pre-toast flatbread 3 minutes to ensure crisp crust and prevent soggy base.
