Servings: 1 cup
Course: Condiment

Ingredients

  • 1 large ripe avocado with slight give for creaminess
  • ½ cup full-fat sour cream room temperature preferred for easier blending
  • 2 tablespoons fresh lime juice from one lime, added immediately to prevent browning
  • ¼ teaspoon garlic powder adds subtle savory depth
  • ¼ teaspoon fine sea salt adjust to taste at the end
  • 2 tablespoons fresh cilantro finely chopped, optional
  • 1-2 tablespoons cold water optional, to thin the sauce as needed

Equipment

  • Blender or food processor For blending all ingredients until smooth
  • Spatula To scrape down the sides of the blender or processor bowl

Method

  1. Halve the avocado and remove the pit, then scoop the flesh into a blender or food processor.
  2. Immediately squeeze the lime juice over the avocado to slow oxidation and keep the green color bright.
  3. Add the sour cream, garlic powder, and salt to the blender.
  4. Pulse the mixture five to six times until combined into a smooth, thick sauce without lumps.
  5. Scrape down the sides with a spatula, then blend on low for 10 seconds until the sauce is silky and uniform.
  6. Taste the crema and stir in additional salt or lime juice if needed.
  7. Add cold water one tablespoon at a time if you prefer a thinner, drizzling consistency and blend lightly to incorporate.
  8. Transfer the crema to an airtight container and chill for 10 minutes to let flavors meld and texture firm up slightly before serving.

Notes

Add lime juice immediately after scooping avocado to prevent browning and keep the sauce vibrant green.
