Ingredients

  • 1 cup gram flour fine ground besan
  • 2 tablespoons rice flour for added crispness
  • 0.5 cup water cool, to mix batter
  • 1 medium onion thinly sliced
  • 1 medium potato julienned into matchsticks
  • 1 cup spinach chopped, or mixed greens
  • 1 green chili minced
  • 1 teaspoon cumin seeds lightly toasted
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • oil spray for basket and pakoras

Equipment

  • Air fryer Used to cook pakoras at 360°F with oil spray and flipping halfway
  • Large mixing bowl To mix batter and vegetables
  • Whisk To mix batter smoothly

Method

  1. Preheat air fryer to 360°F for 3-5 minutes and spray the basket lightly with oil. In a large bowl, mix gram flour, rice flour, cumin seeds, turmeric, garam masala, and salt.
1 cup gram flour, 2 tablespoons rice flour, 1 teaspoon cumin seeds, 0.5 teaspoon turmeric powder, 1 teaspoon garam masala, 1 teaspoon salt
  2. Add water gradually to the bowl and whisk for 3-5 minutes until the batter is smooth and thick enough to coat the back of a spoon without dripping. Let the batter rest for 10 minutes.
0.5 cup water, 1 cup gram flour, 2 tablespoons rice flour
  3. Toss the thinly sliced onion, julienned potato, chopped spinach, and minced green chili into the rested batter. Mix until vegetables are evenly coated.
1 medium onion, 1 medium potato, 1 cup spinach, 1 green chili
  4. Scoop 1.5-inch portions of the batter-coated vegetables and place into the air fryer basket, leaving about 1-inch gaps between pakoras.
  5. Air fry the pakoras for 6 minutes. Then spray them lightly with oil, flip each pakora gently, spray again, and cook for another 6 minutes until golden brown and firm to the touch.

  6. Check doneness by pressing lightly; pakoras should feel firm, not squishy, with no raw batter taste. Serve immediately while crisp.

Notes

  • Let the batter rest 10 minutes to thicken naturally for better binding and texture.
  • Do not overcrowd the air fryer basket; maintain gaps for proper air circulation and crispness.
  • Using rice flour or cornstarch is key for a crisp, non-chewy crust on the pakoras.
