Air Fryer Stuffed Chicken Breasts

No ratings yet
We stuff boneless chicken breasts with a creamy spinach, cream cheese, and mozzarella filling, chill briefly, then cook in the air fryer at 375°F until the internal temperature reaches 165°F. The method keeps breasts moist while giving a lightly browned exterior and melty filling.

Ingredients

  • 4 chicken breasts boneless skinless, about 6–7 oz each
  • 4 oz cream cheese softened
  • 1 cup mozzarella shredded
  • 2 cup fresh spinach packed; wilted and squeezed dry
  • 1 tablespoon olive oil for skillet
  • 1 tablespoon Parmesan freshly grated
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic minced
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for brushing breasts before air frying
  • 1 tablespoon panko optional, for light crust

Equipment

  • Air fryer 6–8 quart basket-style or drawer model
  • Cutting board For butterflying and trimming
  • Mixing bowl Medium
  • Instant-read thermometer Digital
  • Skillet 8-inch for wilting spinach

Method

  1. Preheat the air fryer to 375°F for 5 minutes while you prepare the filling and chicken.
  2. Cook spinach: Heat 1 tablespoon olive oil in an 8-inch skillet over medium; add garlic and spinach and cook until wilted, 1–2 minutes, then squeeze dry and cool.
  3. Mix filling: In a bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, Italian seasoning, cooled spinach, salt, and pepper until homogenous.
  4. Prepare breasts: Butterfly each chicken breast by slicing horizontally leaving a ½-inch hinge, then gently pound to even thickness about ½-inch; season inside and out with ½ teaspoon salt and ½ teaspoon pepper total.
  5. Stuff and seal: Divide filling into four ¾-cup portions, place inside each pocket, press closed, and secure seam with one toothpick; optionally brush outside with 1 tablespoon olive oil and press 1 tablespoon panko on top for crust.
  6. Chill: Refrigerate assembled breasts on a plate for 10 minutes to set the filling and reduce leaking.
  7. Air-fry: Place breasts seam-side down in a single layer in the preheated basket; cook at 375°F for 9–11 minutes, flip and cook 9–11 more minutes until internal temp reaches 165°F and exterior is lightly browned.
  8. Rest and serve: Transfer to a cutting board, rest 5 minutes, remove toothpicks, slice to reveal filling and serve with chosen sides or sauce.

Notes

  • Trim breasts to similar weight (6–7 oz) for even cooking.
  • Chill stuffed breasts 10 minutes before air frying to prevent filling leakage.
