  • optional herbs fresh parsley or rosemary for garnish
  • paprika or chili powder optional, for mild smoky or spicy kick
  • butter optional, to toss on warm bites for richness

Equipment

  • Air fryer To cook steak bites quickly and evenly

  2. Pat cubes dry thoroughly with paper towels.
  3. Toss cubes with 1–2 teaspoons high smoke point oil and sprinkle with salt, pepper, and garlic powder evenly.
  4. Preheat the air fryer to 400°F (200°C). Arrange steak cubes in a single layer in the basket with space between pieces.
  5. Air fry at 400°F for 8 minutes, tossing halfway through, until browned outside and internal temperature reaches 130°F to 140°F (medium rare to medium).
  6. Remove and let rest briefly for 5 minutes to redistribute juices.
  7. Optionally toss with melted butter and minced garlic for richness before serving.

Notes

  • Choose sirloin, ribeye, or New York strip for tenderness and even cooking.
  • Use high smoke point oil like avocado or canola to prevent burning.
  • Tossing halfway ensures even browning and crispness.
  • Resting meat helps redistribute juices for juicier bites.
  • Reheat gently in oven covered with foil to keep juicy.
