Ingredients

  • 14.75 oz canned salmon drained well and checked for bones
  • 0.5 cup breadcrumbs plain or seasoned, added gradually to control moisture
  • 1 large egg cold from fridge for better binding
  • 0.25 cup mayonnaise full-fat for moisture and richness
  • 0.25 cup onion finely diced
  • 2 tablespoon parsley fresh, chopped
  • 1 tablespoon lemon juice fresh or bottled
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Equipment

  • Air fryer Used to cook the salmon patties at 375°F for a crispy exterior.
  • Mixing bowl To combine salmon, binders, and seasonings.
  • Spatula For flipping patties halfway through cooking.

Method

  1. Preheat the air fryer to 375°F for 3 minutes to ensure the basket is hot enough to start crisping the patties immediately.
  2. In a mixing bowl, combine the drained salmon, breadcrumbs, egg, finely diced onion, mayonnaise, lemon juice, Dijon mustard, chopped parsley, salt, and black pepper. Mix until just combined without overmixing.
14.75 oz canned salmon, 0.5 cup breadcrumbs, 1 large egg, 0.25 cup onion, 0.25 cup mayonnaise, 1 tbsp lemon juice, 1 tsp Dijon mustard, 2 tbsp parsley, 0.5 tsp salt, 0.25 tsp black pepper
  3. Form the mixture into 4 patties, each about 3 inches in diameter and ¾ inch thick. Press firmly with your hands to help them hold together during cooking.
  4. Place the patties in the air fryer basket with at least 1-inch gaps between each patty for even cooking. Cook in batches if necessary.
  5. Air fry the patties for 6 minutes, then carefully flip each with a spatula. Continue cooking another 6 minutes until patties are golden and reach an internal temperature of 145°F.
  6. Remove patties from the air fryer and let them rest for 3 minutes to firm up the texture before serving.

Notes

  • Press patties firmly before cooking to avoid crumbling.
  • The internal temperature should reach 145°F to ensure doneness.
  • Pat salmon dry if the mixture feels too wet to prevent soggy patties.
